This recipe is for all pizza lovers who want to be in shape and not cut off on pizza. Don't let yourself fooled by the fact that the crust it's made from cauliflower, because you won't feel the difference. In my opinion, it's even more delicious this way and mush more easier to prepare. Forget about the yeast and foaming it. Forget about waiting for the dough to grow. This cauliflower crust does it's job. And you can put on it everything you like. Imagination is the limit.
Also, if you don't like cauliflower, you could use broccoli or zucchini instead. It's the same process.

The Crust:

  • 3 eggs

  • 1 kilogram of cauliflower

The Topping:

  • 300 grams of red ripe raw tomatoes or ketchup or tomato sauce

  • 200 grams of green peppers sweet or hot

  • 500 grams of cow cheese or mozzarella or any cheese you like

  • 50 grams of olives

  • 200 grams of chopped frozen spinach


  • Wash well the cauliflower/broccoli grind it. You must obtain rice-like particles. I use a food processor, cause it is much easier.

  • Put the obtained particles into a towel and squeeze out all the liquid.

  • Bit the eggs with some salt and pepper and mix it with the squeezed cauliflower rice.

  • Set up a baking pan lined up with parchment paper and put the obtained mixture. Make sure that you spread it equally in the pan.

  • Put it into the preheated oven (170 degrees Celsius) and let it cook for about 10 minutes until the crust starts to form a yellow brown color.

  • Prepare the other ingredients for the topping.

  • Take the crust out of the oven and put the ingredients on.

  • Put the pan back into the oven for 15 minutes.

  • Let it cool and then cut it into portions. Serve it cold or warm

  • Enjoy!
